Saison is the workers’ beer. Traditionally brewed during the quieter winter months on farms in the Wallonia region of Belgium, the beer was then consumed by the seasonal farm workers (saisonniers) during the hard labours of the spring, summer and autumn.
Our head brewer Ben is a great admirer of Belgian beer and the Saison style in particular. He has been meticulously planning this brew with due care and deference. Ben sourced Grains of Paradise as well as pink and black peppercorns to add aromatic spiciness. The yeast is the WLP590 from White Labs that gives a light phenolic bite, rounded off with a subtle fruitiness. One of the main characteristics of the yeast is it’s ability to dry the beer out to a crisp palate that is very refreshing.
The label features a photograph by Chris Coulson @cwiss part of his @LondonersUnderground series. It depicts the familiar scene of a commuter rushing home, hopefully to relax and enjoy a hard earned beer.
